2 tbl olive oil
1/2 cup onion chopped
1 cup courgette cut in 1/2" cubes
1 cup mushroom chopped
1 x garlic clove crushed
1 cup fresh tomatoes chopped
1/2 tsp salt
1/4 cup Italian parsley chopped
2 tbl fresh basil chopped

Yield: 2-1/2 cups, or enough for 1/2 lb pasta

1. Heat oil in a wide saucepan; add onion; saute 5 minutes. Stir in courgette and mushrooms; saute over hight heat, stirring, until tender, about 10 minutes. Stir in garlic, saute 1 minute. Add tomatoes, cook, stirring, 5 minutes. Add salt, parsley, and basil.

2. Toss hot pasta with the sauce and serve at once. Serve with Parmesan cheese, if desired.

pound of pasta. DOUBLE recipe for 1 pound pasta.
