Instructions: Put courgette into water and bring to a boil. Let stand for 5 minutes.

Drain well. Put courgette into pie shell.

Mix together remaining ingredients and spread over courgette. Put on the top pie crust. Bake at 350 degrees for 1 hour or until golden brown.
