Instructions: Saute onion and green pepper in butter. Add the courgette and cheese, seasoned salt and pepper. Cool. Beat eggs until lemon colored and frothy.

Fold courgette, cheese, onion and green pepper into the eggs. Pour into a 2 quart ungreased casserole dish and top with seasoned bread crumbs. Bake in 375 degree oven about 30 minutes or until a knife inserted comes out clean.

Serve.
