Instructions: Heat the olive oil in a large non-stick pan or wok.
Stir fry the mange tout, spring onions and courgettes for 1 minute. Add the garlic and stir fry for a further minute. Reduce the heat. Add the soy sauce, stock, lemon juice and seasonings and stir fry for 2 minutes and serve immediately. NOTES : A quick and easy stir fry dish suitable as a main course or vegetable accompaniment.
