Recipe for Courgette and Pepper Slaw

Ingredients:

Amount	Ingredient
2 x	Green courgette
2 x	Yellow courgette
1 x	Red pepper
4 x	Green onions
1 x	Banana pepper, slivered
	----------------- DRESSING ----------------
1 sm	Garlic clove, chopped
2 tsp	Dijon mustard
1/2 tsp	Honey
2 tbl	Wine vinegar
1/3 cup	Olive oil
	Salt

Instructions:

Instructions: 1. With shredder blade of food processor, shred courgette into long strips or cut by hand. Reserve in bowl. Sliver red pepper and green onions and add to courgette. Add optional banana pepper for a spicy flavour.

2. In a small bowl whisk together garlic, mustard and honey. Whisk in wine vinegar and olive oil. Mixture should be quite thick. Season with salt and pepper.

3. Just before serving, toss vegetables with vinaigrette.
