600 gm courgettes wiped clean
25 gm butter
150 ml double cream
2 lrg clv garlic peeled and chopped
Instructions:
Instructions: Trim the ends of the courgettes then cut lengthwise into slices about 5 per courgette.

Heat the butter in a large frying pan and fry the courgettes (in batches) for about 5 minutes turning once until they begin to colour.

Using a slotted spoon transfer to an ovenproof dish and season well.

Heat the cream and garlic in a saucepan until bubbles appear then pour over the courgettes and sprinkle with the parmesan.

Bake in a preheated oven (190C/375F/ Gas Mark 5) for 20-25 minutes until golden brown.

You can also add a grating of lemon zest to the cream.

Serves 6
