1 cup red-wine vinegar plus
2 tbl red-wine vinegar
1 sprg fresh thyme
1/2 sm leek cleaned
1 x piece carrot - (3") peeled
1 x piece celery - (3")
3 med garlic cloves peeled
2 x bay leaves
1 tsp fine sea salt
Instructions:
Instructions: In a large saucepan over high heat, combine the ingredients with 7 cups water, and bring to a boil. Boil 10 minutes. Strain through a fine-mesh sieve.

Store, tightly covered, in the refrigerator for up to 3 days, or in the freezer for up to 2 months.

Makes 6 cups.
