Instructions: Place water and salt in a medium saucepan over high heat and bring to a boil.
Stir in couscous, cover pan and remove from heat. Let stand, covered, 5 minutes. Remove to a large bowl and fluff with a fork. Add corn, tomatoes, mango, oil, juice, mint and pepper and toss gently to combine. Cover and let stand at room temperature 30 minutes to blend flavors or refrigerate until ready to serve.
