Instructions: In a medium-sized saucepan over medium heat, bring the water, oil, cinnamon, cumin, salt, and apricots to a boil. Stir in the couscous, remove from the heat, cover and allow to stand for 5 minutes. Allow to cool and flake with a fork, stirring in the currants, pistachios, mint, salt, and pepper to taste. Serve at room temperature.
