1/2 cup chicken stock
2 tbl butter
1 cup uncooked couscous
1 med tomato, seeded and diced
1/2 cup chickpeas, cooked
1/4 cup raisins
1/4 tsp ground cinnamon
1/4 tsp crumbled dried basil
1/4 tsp crumbled dried thyme
Instructions:
Instructions: Preheat oven to 350 F. In a medium-sized, heavy saucepan; bring the stock and butter to a boil. Add the couscous. Reduce heat to simmer and cook, covered, for 5 minutes, or until the couscous is tender and the liquid is absorbed.

Stir in the remaining ingredients and place the mixture in a small, buttered baking pan. Bake, covered, for 15 minutes or until heated through. Serve immediately.

YIELD: 4 SERVINGS
