Instructions: 1. In saucepan, bring stock to boil; reduce heat to medium. Add zucchini; simmer for 2 minutes.
2. Remove from heat. Add couscous and lemon rind; stir once. Cover and let stand for 5 minutes. With fork, stir in onions, parsley, and salt and pepper to taste. Makes 4 servings. Couscous is an instant grain that is fluffy and ready to eat just 5 minutes after it is combined with boiling liquid. I use whole wheat couscous, which tastes the same as refined wheat couscous but has more fibre. (The National Grocers chain in Canada sells this packaged as part of its "Presidents Choice" line of products. In this case, it is "Maharajahs Choice".) Email this Recipe:
