FOR THE SALAD ----------------
4 x fresh corn tortillas, 5" in diameter
1/4 lb crabmeat, see note
3 x ribs celery, strings removed,
finely chopped
4 x green onions, chopped
1/2 cup small green peas, cook, drain & chill
1 sm cucumber, peel, seeded, & chop
----------------- FOR THE DRESSING ----------------
1 tbl fresh lime Juice
1 tbl fresh orange juice
2 tbl fat-free yogurt
1 x cascabel chile, stem removed,
chopped
1 tbl chopped fresh parsley
1/2 tsp ground white pepper
----------------- GARNISH ----------------
1/4 cup grated carrot
Instructions:
Instructions: NOTE: cooked, picked over, rinsed, and shredded

Shape the tortillas over a small microwave-safe glass bowl to make a basket or cup, and cook one at a time on HIGH in a microwave for 1 minute.

Remove from microwave and let stand for 4 to 5 minutes; it will crisp up as it sits.

Place the crabmeat in a mixing bowl and add the celery, onions, peas, and cucumber. Mix together the dressing ingredients. Stir the dressing into the crab mixture, and lightly mix.

Fill the tortilla cups with the crab mixture, sprinkle a few shreds of grated carrot over the top, and stick 2 or 3 olives into the sides of the salad.

SERVING SUGGESTIONS: Place the compuestas on lettuce leaves and serve for a special lunch with frosty margaritas.
