1 lb fresh backfin crabmeat, picked and cleaned
2 tbl fresh parsley, chopped
2 tbl onions, grated
1 tbl fresh lemon juice
1 cup thick cream sauce, choice of favorite
1 x egg
1 tsp Worcestershire sauce
1/8 tsp freshly ground black pepper
2 dsh Tabasco sauce, optional
1 cup dried breadcrumbs
1 tsp ground paprika
Instructions:
Instructions: In a large bowl, combine the first nine ingredients and mix together with hands. Shape the mixture into croquettes. In a medium-sized bowl, stir together the bread crumbs, paprika, and eggs. Roll each croquette in the breadcrumb mixture and let stand for 1 hour.

Fry the croquettes in deep fat at 375 F. for 4 to 5 minutes or until browned. Serve immediately.

YIELD: 6 APPETIZER SERVINGS
