1 x pie crust, (9 inch) baked
4 x eggs
2 cup light cream
1/3 cup onions, minced
I teaspoon salt
1/8 tsp cayenne pepper
1 can crabmeat, (7 1/2 oz.) drained
1 cup Swiss cheese, shredded OR
4 oz mozzarella cheese, shredded
Instructions:
Instructions: Beat eggs until blended. Stir in cream, onion, salt, and red pepper. Pour into pie-shell. Pat crabmeat dry with paper towel. Sprinkle crabmeat and cheese in pie-shell. Sprinkle top with parsley. Bake for 15 minutes at 425 degrees; reduce heat to 300 degrees for 30 minutes or until knife tests like custard.

NOTE: Can cook partially, then freeze to be baked later.
