50 gm butter
1 sm onion peeled and finely chopped
2 clv garlic peeled and chopped
150 gm okra washed and thickly sliced
200 gm spinach washed
400 ml tin of coconut milk
600 ml hotfish stock
350 gm white crab meat
Instructions:
Instructions: Melt the butter in a sauce an add the onion and garlic and gently fry for 10 minutes.

Add the okra and two thirds of the spinach stir until the spinach begins to wilt then add the coconut milk. Let it bubble away for about 5 minutes until thickened slightly.

Add the hot stock bring to the boil then add the crab meat and remaining spinach.

Stir then cook for about 5 minutes.

Season to taste and serve in warin bowls with an optional crab claw in each.

Add a chopped red chiw to the onion and garlic if you like your soup really hot.

Serves 4
