Yield:
2 as a main salad
Ingredients:
Amount Ingredient
zest and juice of a lime
4 tbl light fruity olive oil
1 tbl white wine vinegar
2 tsp nam pla (Thai fish sauce)
5 tbl raw shelled peas
1 x quarter of a cucumber finely diced
2 x spring onions finely chopped
1 tbl chopped coriander leaves or more if you wish
1 tbl chopped mint leaves
250 gm white and brown crab meat crisp
Instructions:
Instructions: Put the zest and juice of the lime in a mixing bowl and add the olive oil vinegar and nam pla. Stir in the peas.

If they are not as tender and sweet as you would like then boil them for a minute or two drain and rinse in cold water before using.

Add the diced cucumber spring onions and herbs.

Season with a little salt and a few grinds of black pepper.

Put a few crisp lettuce leaves on each plate you can tear them up a little if they are large.

Toss the crab meat gently in the dressing then pile on to the lettuce.

Serve immediately with brown bread and butter.

Serves 2 as a main salad
