1 x melon, honeydew
300 gm crab meat
300 gm grapes, green
1 tsp lemon juice
1/10 tsp cayenne pepper
Instructions:
Instructions: Wash the melon. Using a fine, sharp knife cut out the top of the melon in a serrated or scalloped fashion - about one quarter of the way down from the top. If necessary, slice a thin piece of skin off the bottom of the melon to make it stand straight.

Scrape out the melon seeds into a strainer and catch the juice. Using a melon baller scoop out the flesh of the melon and reserve the balls in a bowl with the juice.

Wash and dry grapes. Add to melon balls. As a good amount of juice comes from a ripe melon, pour off some as it will be too much. (Chilled melon juice makes a refreshing drink.) Add fresh, shredded crabmeat, lemon juice and cayenne pepper and toss mixture lighly. Spoon mixture into the empty melon shell and sprinkle with chopped mint.

Replace lid, but not to fit, allowing filling to be seen and decorate one side with a sprig of mint. Chill well before serving.

Present a bed of crushed ice.
