Ingredients:
Amount Ingredient
1 lrg onion sliced
2 tbl vegetable oil
2 sm red chilies sliced
6 oz beer
2 med tomatoes diced
1 tbl fried garlic or shallots
1 cup watercress
6 whl large crabs rinsed and cleaned
----------------- MARINADE ----------------
Salt to taste
Freshly-ground white pepper to taste
1 tsp sesame oil
1 tbl oyster sauce
Instructions:
Instructions: Marinate the crab with salt, pepper, sesame oil, oyster sauce and a clove of garlic for 1 hour.

Saute remaining garlic and onion in oil for 2 to 3 minutes, or until brown. Add crab and chiles, and continue frying. After a few minutes, add beer and cover. Reduce heat, and cook for 10 minutes. Add tomatoes. Cover again. Cook for 5 minutes.

Serve in bowls, adding a little of the broth. Garnish with fried garlic and watercress.

Comments: Almost any variety of hard-shell crab can be used for this recipe.
