Recipe for Crabmeat Martini with Scallions, Onion Seeds, Pepper Vodka

2 x	scallions thinly sliced
2 tbl	onion seeds plus
1 tbl	onion seeds
1 x	lemon zested and juiced
4 tbl	extra-virgin olive oil
1 shot	pepper vodka - (1 1/2 oz)
1 tbl	dry vermouth
1 cup	cleaned watercress
1 lb	fresh crab meat picked through
	for shells
	Salt to taste

Instructions:

Instructions: In mixing bowl, mix scallions, 2 tablespoons onion seeds, lemon juice and zest, extra virgin olive oil, vodka, vermouth, watercress, crab meat and salt and pepper, to taste. Toss until all ingredients are mixed and divide among 4 martini glasses. Sprinkle with remaining onion seed and serve.

This recipe yields 4 servings.
