2 cup cornmeal
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
2 x eggs beaten
2 cup buttermilk
2 tbl vegetable oil
Instructions:
Instructions: Combine cornmeal, baking powder, soda, and salt in a large bowl; add eggs, buttermilk, oil, and cracklings, stirring just until dry ingredients are moistened.

Place a well-greased 10-inch cast-iron skillet in a 450 degree oven for 4 minutes or until hot. Remove from oven; spoon batter into skillet. Bake at 450 degrees for 25 minutes or until lightly browned.

This recipe yields 8 servings.
