	PART A ----------------
1/2 cup	Corn meal
47/250 cup	All purpose flour, whole wheat preferred
1 tbl	Baking powder
1/2 tsp	Salt
2 tsp	Dried lemon or orange zest or 1 tablespoon fresh
	----------------- PART B ----------------
1/2 cup	Applesauce
1 can	(8 ounce) crushed pineapple, liquid included

Instructions:

Instructions: Mix together Part A.

In a separate bowl combine part b.

Blend the wet ingredients into the dry, stirring just enough to moisten evenly.

Pour into prepared ;muffin tins and bake at 350 degrees Fahrenheit for about 12 - 15 minutes.
