Instructions: Slice the apples and spread them in a 9-inch square nonstick baking pan.
Sprinkle with lemon juice, Sucanat, cinnamon, and cranberries. Preheat oven to 350F. Combine the rolled oats, walnuts, maple syrup, vanilla, and salt. Stir to mix, then spread evenly over the apples. Bake until the apples are tender when pierced with a knife, about 35 minutes. Let stand 5-10 minutes before serving. NOTES : This was incredibly easy. Since there was just two of us, I basically made a third of the recipe, and I baked each serving in small Pyrex bowls. I just realized I forgot the lemon juice, and I didnt use the Sucanat because I had slightly sweet apples. I also hate walnuts, so I omitted those. This was good, albeit the topping a little dry. Next time I might add a touch of concentrated frozen apple juice. Perhaps if my apples had been juicier, or Id remembered the lemon juice, it wouldnt have been dry. We liked it, anyway.
