2 tsp shortening
2 cup all-purpose flour
1 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp grated orange peel
Juice from 1 orange
1/2 cup shredded Cheddar cheese (6 oz.)
1 x egg beaten
1 cup cranberries cut in half
Instructions:
Instructions: Heat oven to 350.

Grease loaf pan, 9x5x3 inches.

Cut shortening into flour, sugar, baking powder, baking soda, salt and orange peel with pastry blender in large bowl. Add enough water to orange juice to measure 1/4 cup. Stir juice mixture, cheese and egg into flour mixture. Fold in cranberries and pecans. Pour into pan.

Bake 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Loosen sides of loaf frompan, remove from pan. Cool completely before slicing.

Makes 1 loaf.
