Instructions: 1.For Marmalade: Combine all ingredients in saucepan. Cook over medium-high heat until most berries pop, stirring frequently. (Takes about 5 min.) Cool mixture to room temperature.
2.For the Cheese: Using a sharp knife, cut circle in top rind of cheese wheel, leaving 1/2 inch border of rind along the edge. Place cheese in an 8-inch diamgeter ceramic baking dish or a cookie sheet lined with foil. 3.Spread marmalade over exposed cheese (ooh! sounds kinky!). Bake cheese in a 300F oven until soft, about 12 minutes. 4.Serve cheese warm (or at room temperature) on a large platter. Surround with crackers and fruit slices. NOTES : Ive tried this one on those little 3-4" brie rounds you find in the grocery store- I believe I halved the marmalade recipe for 2 small rounds, and still had some marm leftover.
