3 cup Unbleached flour
1 cup Brown sugar -- packed
1 cup Granulated sugar
2 tsp Baking powder
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Cloves
1/4 tsp Salt
1 cup Oil
4 x Egg whites -- whipped
1 cup Whole cranberry sauce
1 cup Carrots -- grated
Instructions:
Instructions: Preheat oven at 350. Prepare a cake pan with cooking spray and flour. In a mixing bowl, combine flour, sugars, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. In another mixing bowl, combine oil, egg whites, cranberry sauce, carrots, and lemon peel. Mix dry ingredients with wet ingredients just until combined. Pour mixture into prepared pan. Bake for 45 minutes.
