Instructions: Ahead of time, boil juice until reduced to 2/3 cup. Mix with remaining ingredients. Cover and refrigerate for at least an hour before serving.
NOTES : The powdered pectin acts as an emulsifier. Without it the dressing will be very watery. Boiling the juice helps to intensify the flavor. If you use 100% unsweetened cranberry juice, try adding sugar or honey to taste. This came out pretty good. I served it over a tossed green salad with caramelized pears and toasted walnuts. Yummmm.
