Recipe for Crappie or Walleye Filets with Wild Morel Mushrooms

Ingredients:
Amount Ingredient
2 lb Fish fillets
1/3 cup Sliced mushrooms
(wild mushrooms may be used)
1/2 cup Chopped onion
1/4 tsp Garlic powder
1/4 tsp Paprika
1/4 tsp Celery salt
1 tsp Marjoram
1/2 tsp Parsley
Salt to taste
Freshly-ground black pepper to taste
2 tsp Lemon juice
1/2 cup Monterey Jack cheese
1/4 cup Bread crumbs
1/4 cup Melted butter
2 tbl Dry white wine
Instructions:
Instructions: Grease a baking dish with butter. Spread the onions and mushrooms over the bottom of the dish. Layer fillets, overlapping the thin part to prevent overcooking. Sprinkle fillets with seasonings, wine and lemon juice.

Top with cheese and bread crumbs and drizzle butter over top. Cover with foil and bake at 400 degrees for 15 minutes. Remove foil and bake 5 to 10 minutes longer. Serve with Fried Wild Morel Mushrooms if available.

Comments: Theres not much better eating than fresh walleyes or crappies. This is the time of year I like to fill my freezer with fillets. Also every spring around turkey season, it is not uncommon after a good rain to find an abundance of wild morel mushrooms. They are one of the delicacies of the great outdoors.
