Ingredients:
Amount Ingredient
1 doz fresh ears of corn cut off the cob, or 2 pounds frozen corn
4 oz unsalted butter
1 x bell pepper, diced
1 x onion, diced
1 x fresh tomato, peeled, seeded and diced
1/2 lb cooked crawfish tail meat
Cayenne and black pepper to taste
Instructions:
Instructions: In large saucepan melt butter over medium heat. Add all other ingredients except the crawfish and cook covered until corn starts to get tender, about 15 minutes. Add crawfish and continue cooking until corn is tender, about five more minutes.

Yield: 12 servings.
