3 tbl unsalted butter
2/3 cup minced scallions
8 lrg eggs
4 oz cream cheese cut into bits,
and softened
Salt to taste
Freshly-ground black pepper to taste
Snipped chives for garnish
Instructions:
Instructions: In a medium non-stick skillet cook the scallions in the butter over moderate heat, stirring occasionally, until soft.

In a bowl whisk together the eggs, cream cheese and salt and pepper. Pour the mixture into the skillet and cook over moderately-low heat, stirring, until cooked. Transfer to a serving plate and sprinkle with the chives or scallions.

This recipe yields 4 servings.
