Instructions: Preheat oven to 325F.

Prepare the batter for "Chocolate Therapy Cake".

Lightly coat a muffin tin with vegetable oil cooking spray. Pour the batter in & bake for 25 minutes.

Let cool & remove from the tin. Using a knife, cut a 1 1/2 inch deep in the top of each cupcake & remove the cupcake "plug". Set aside.

Fill each cupcake with marshmallow cream. Carefully replace only the top 1/2 inch of the cupcake plugs.

Ice with "Chocolate Buttercream Frosting", "Creamy Caramel Frosting" or " Rich Brownie Frosting". (see recipes)

TIP: Using "Seven Minute Frosting" (see recipe), will make this more like a Hostess cupcake but will take about 15 minutes longer to make.
