Instructions: Place water and butter in pan, bring to boil, add sifted flour all at once. Stir vigourously with a wooden spoon over heat until mixture is thick and leaves sides of pan to form a smooth ball; remove from heat and cool slightly.
Put cooled paste into small bowl of electric mixer; add eggs, one at a time, beating well after each addition. Spoon or pipe teaspoonfuls of mixture onto greased oven tray; bake in hot oven 10 minutes, reduce heat to moderate, bake a furthur 15-20 minutes until golden and crisp. Remove from oven and allow to cool. Store in air tight container until required. Using a piping bag, fill with whipped cream or pastry cream. Dip tops in melted chocolate. Email this Recipe:
