Instructions: I made this yesterday after buying about 20 pounds of tomatoes at the farmers market for $8. Its not really a recipe. I put tomatoes through the food processor until I had a big potful of pureed tomato, simmered them on top of the stove for about an hour, then strained them through a colander (all this is messy and takes awhile, but what a fine juice you have when you are done). Then I put a package of Mori-Nu soft through the processor for a few minutes, added some tomato broth and blended until smooth, poured the whole thing back into the pan of tomato broth, added about a cup of milk (not really necessary or perhaps could have used soy milk?) and threw in a handful of basil. It made really good cream of tomato soup, very healthy and natural tasting. Good way to enjoy all those great tomatoes. Anyway, I think you can mix blended tofu into any cream type soup instead of milk or cream and it will taste very natural.
