Instructions: Wash spinach well. Remove the white stems.
Put spinach in pan with approx. 1/4 cup hot water, cover and cook until wilted, about 3 minutes, toss with tongs while cooking. Drain and press out moisture. Heat butter in pan, add peeled and diced onion, crushed garlic; cook until onion is tender. Add spinach, salt, pepper, nutmeg and toasted pinenuts. Stir until spinach is heated through. Add sour cream and cook for a further 3 minutes. Serve with grilled chicken, lamb or fish. Email this Recipe:
