Instructions: Bring 1 cup of the milk to a boil in medium saucepan. Stir in rice.
Return to a full boil. Cover; reduce heat. Simmer 5 minutes. Stir in the remaining 2 cups milk, the pudding mix, raisins and cinnamon. Bring to a boil over medium heat, stirring constantly. Remove from heat; cover. Let stand 5 minutes. Stir; cool slightly. Serve warm, sprinkled with additional cinnamon, if desired. (Or, place plastic wrap directly on surface of hot pudding and refrigerate at least 30 minutes.) Makes 3 1/3 cups or 6 servings. Email this Recipe:
