Instructions: To make the croutons, cut the bread lengthwise in half. Rub the garlic cloves on the inside of the bread. Drizzle the inside of the bread with the olive oil.
Cut the bread into cubes and place on a baking sheet. Bake until crisp, about 10 minutes. Set the croutons aside to cool. Meanwhile, make the dressing by combining the lemon juice, mustard and tofu in the work bowl of a food processor fitted with a metal blade. Process until it becomes smooth and creamy. Season to taste with salt and pepper. Place the lettuce in a large bowl and add the dressing. Add the croutons and toss the salad. Add the parmesan cheese and toss once more. Email this Recipe:
