Instructions: Cook the pasta following the packet directions.
While the pasta is cooking, prepare the sauce. Heat the oil in a frying pan. Add the chicken and brown over a moderately high heat. Add the spring onions and mushrooms to the pan and cook for 1-2 minutes. Combine the soup mix, water and sherry. Add to the pan with the thyme. Bring to the boil, stirring, then simmer for 4-5 minutes or until the chicken is cooked. Drain the pasta and combine with the chicken mixture. Add the parsley and toss well before serving.
