In a large bowl combine cabbage carrots raisins scallions half of coriander and half of parsley. Toss with dressing. Taste and adjust seasoning. Sprinkle with remaining coriander and parsley. We get the word coleslaw from the Dutch whose great cabbage salads spread from their East Coast settlements in eighteenth century New Netherland to general popularity throughout the country.
