Instructions: Combine all of the dressing ingredients in a blender or food processor and puree until smooth. You may need to stop once or twice to scrape down the sides of the blender with a rubber spatula. Covered and refrigerated, this dressing will keep for up to 5 days.
Variation: For a simpler and slightly milder dressing, omit the tarragon, garlic, and spinach and use a generous, packed tablespoon each of fresh basil and dill. For a tarragon-accented dressing (nice with a French-style meal), replace the dill with an additional tablespoon of fresh tarragon. Yield:"1 cup" Email this Recipe:
