1/3 oz lowfat firm silken tofu
1/2 cup water
3 x green onions minced
1 x carrot finely shredded
1/4 cup fresh parsley or mint leaves minced (divided use)
2 tbl capers drained and minced
2 tbl lemon juice more to taste
freshly ground black pepper
Instructions:
Instructions: 1. If using tuna, drain and rinse well.

2. Place tofu and water in blender or food processor bowl; blend until smooth and creamy. Transfer blended tofu to a large skillet or saucepan and add onions, carrot, half the parsley, capers, lemon peel, lemon juice and black pepper.

3. Bring to a boil over medium heat. Reduce heat, stir in tuna, if using, and pasta or rice; heat through. Garnish with remaining parsley or mint.
