Ingredients:

375 gm Dried pasta penne, (12oz)
25 gm Butter, (1oz)
2 tbl Olive oil
1 sm Onion, finely sliced
2 x Cloves garlic, crushed
1 x 125 gram pac Girolle mushrooms, brushed and sliced
1 x 250 gram tub mascarpone cheese
Salt and freshly ground pepper
Instructions:
Instructions: Cook the pasta as per pack instructions.

Heat the butter and oil in a frying pan over a moderate heat, saute the onions and garlic until softened. Add the mushrooms and saute until soft and wilted.

Drain pasta, reserving 75ml-125ml (3-4fl oz) of the liquid. Add to the pan along with the mascarpone and parsley. Stir to combine, then heat through. Serve immediately.

NOTES : A quick and easy to prepare creamy mushroom pasta style dish.
