2 cup 500 ml peas
2 tbl 30 ml butter
1 cup 250 ml mushrooms, sliced
1 tbl 15 ml all-purpose flour
1 cup 250 ml light cream or milk
1/4 tsp 1 ml each salt & pepper
Instructions:
Instructions: In a medium saucepan; bring small amount of water to boil; add peas.

Reduce heat to simmer and cook for 4 to 5 minutes until tender; drain.

Meanwhile, in small saucepan, melt butter over medium heat; cook mushrooms for 2 minutes. Sprinkle with flour; cook for 1 minute, stirring constantly. Whisk in milk, salt, pepper and nutmeg; cook for about 4 minutes or until smooth and thickened. Stir in peas. For a complete vegetarian meal; serve over your favourite pasta.

Serves 4

Suggestion: Add a pinch of sugar - to both the peas when cooking them and to the white sauce. It makes a world of difference in the flavor - just a bit, mind you - like maybe 1/4 tsp (1ml).

If using canned peas, just add it to the white sauce as you make it.
