Ingredients:

20 gm butter
1 tbl olive oil
2 clv garlic, crushed
4 x spring onions
200 gm mushrooms
1/2 cup white wine
1 cup chicken stock
3/4 cup cream
2 tsp mustard, whole grain
1 tbl cornflour
2 tsp parsley, chopped
Instructions:
Instructions: Slice mushrooms and spring onions.

Heat butter and oil in a pan, add garlic, spring onions, and sliced mushrooms and saute for 3 minutes.

Add white wine and cook for 3 minutes stirring constantly until mushrooms are tender and liquid is reduced. Stir in chicken stock, cream and mustard, bring to the boil, simmer 2 minutes to reduce slightly.

Dissolve cornflour in a small amount of cold water.

Stir in dissolved cornflour to slightly thicken. Add herbs and season.

Serve with grilled or roast chicken or meats.

Makes about 2 cups.
