Instructions: In a medium bowl, beat eggs, milk, salt and pepper until just combined. Melt butter in a large skillet over low heat. Pour in egg mixture. Cook over low heat. As eggs begin to set on bottom, gently lifted cooked portion with spatula, letting un- cooked portion flow to bottom of pan. Drop cream cheese cubes on top of eggs. Cook until eggs are no longer runny and cheese is melted. Sprinkle with chopped parsley.
