1 lb Spinach
1 tsp Olive oil
1 tbl Minced shallots
2 tbl Cream cheese
1/8 tsp Salt or to taste
Instructions:
Instructions: Rinse the spinach thoroughly and discard the tough stems.

In a large skillet, heat the oil over medium-high heat. Add the shallots; cook, stirring, until softened, about 30 seconds.

Add the spinach; cook, stirring until wilted, about 2 minutes. If there is liquid in the bottom of the skillet, drain off as much as possible.

Add the cream cheese, salt, and nutmeg. Cook, stirring, until the cheese melts and any liquid evaporates.

This recipe yields 2 to 3 servings.

Variation: Use chive cream cheese.

Comments: Not a creamed spinach, which contains a white sauce and uses chopped spinach, this recipe uses leaf spinach with cream cheese for a finisher.
