1/2 lb fresh asparagus ends snapped off
1/2 cup low-fat sour cream
1/4 cup Parmesan cheese
1 tbl low-fat mayonnaise
1 tbl tarragon
1 tbl lemon juice
1/2 cup evaporated fat-free milk
Salt to taste
Instructions:
Instructions: Rinse the asparagus and pat dry. Steam the spears in an asparagus steamer or in a metal steamer over boiling water for 8 minutes until tender-crisp.

Meanwhile, combine all remaining ingredients in a saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes. Pour the sauce over the asparagus and serve.

This recipe yields 6 servings.

Serving size: 1/2 cup.
