Instructions: In medium saucepan, stir together undrained pineapple, evaporated skim milk, juice concentrate, orange peel and cornstarch. Cook over medium heat, stirring constantly, until mixture boils and thickens. Cool to room temperature. In small mixer bowl, beat Neufchatel cheese and sugar until creamy; gradually add pineapple mixture, beating until blended.
