300 ml milk
1/2 x vanilla pod
4 x egg yolks
60 gm caster sugar
Instructions:
Instructions: In a saucepan bring the milk to the boil with the vanilla pod.

In a bowl amalgamate the egg yolks sugar and flour to make a smooth paste.

Carefully add half the milk to this paste stirring continuously Pour this mixture back into the remaining hot milk and cook slowly stirring well until it has thickened.

Remove the vanilla pod.

Cook for 10-15 minutes.

If there are any lumps pass through a very fine sieve.

Pour into a glass bowl and leave to cool.
