Ingredients:
Amount Ingredient
2 slc Bacon
1 lrg Onion, sliced,
Separated into rings
1 med Green pepper, chopped finely
1/2 cup Chopped fresh tomatoes
1 sm Bay leaf
2 cup Corn, cut from cob
1/4 tsp Salt
Instructions:
Instructions: Fry bacon until crisp. Remove from skillet, reserving drippings. Drain bacon & crumble. Add onion & pepper to drippings in skillet. Cook over medium heat, stirring constantly, until crisp-tender. Add tomatoes & bay leaf to onion mixture. Simmer 10 minutes, stirring occasionally. Stir in corn & simmer 10 minutes. Discar bay leaf. Stir in salt, pepper & bacon.

Yields 6-8 servings. (Great way to use up extra tomatoes & fresh corn.)
