Ingredients:

1/2 tbl oil
2 x lean bacon rashers, diced
1/2 x brown onion, chopped
1/2 x red capsicum, diced
1/2 cup long grain rice
1/2 x clove garlic, chopped
1/2 cup canned tomatoes, drained and chopped
1/2 sprg thyme
1/4 tsp chilli paste
salt and freshly ground black pepper
1 cup chicken stock
Instructions:
Instructions: Preheat oven to 180C / 350F

Heat oil in an ovenproof casserole pan and on medium heat stir-fry bacon, onion and capsicum for about 5 minutes.

Add rice, stir-fry for about 1 minute and then add garlic, tomato, thyme and chilli paste.

Season with salt and pepper and stir well. Add stock, bring to a simmer, cover and cook in the oven for 12 minutes.

Add prawns and cook for a further 5 minutes before serving.
