1 x Roasting-sized wild pig whole or quartered
Salt to taste
Red pepper to taste
Freshly-ground black pepper to taste
4 cup Water - (to 5 cups)
Instructions:
Instructions: Season well a roasting-sized wild pig, whole or in quarters, with salt, and red and black pepper. Put into a roaster with 4 or 5 cups water. Cover and cook on lower shelf of the oven at 350 degrees until very tender, a matter of hours. This can be done early in the day; if so, reheat to continue. Uncover; increase heat to 450 degrees to brown and crisp skin. Sweet potatoes and/or apples can be added to pan for the last 45 minutes.
